Veg Semiya / Vermicelli Upma An easy to prepare...Breakfast and Lunch box receipe. Ingredients: Semiya (Vermicelli) - 1 cup Vegetables - 1 cup (veggies can be of your choice ..i have added carrots and peas in the receipe.. finely chopped beans, cabbage, capsicum, corn can also be added) onions - 2 med size Green chillies - 2-3 or according to taste Ground nuts /Cashewnuts - 1 Tbsp Coriander leaves Lime juice - 1 tsp Turmeric powder - a pinch, salt to taste, oil- 2-3 tsps Water required 2 - 3 cups Tempering: mustard seeds, jeera, chana dal Method: Heat a pan and fry the semiya/vermicelli to a light red colour . Bring to boil 2- 2 1/2 cups of water in a vessel seperately ..once the vermicelli turns light red , add it to the boiling water along with a drop of oil.. mix it gently and cook till semiya is done..(The vermicelli will bulge a little and become soft.) Put it in a colander and run cold water on it. This procedure makes the vermicelli non sticky. Spread it in a plate . Heat a pan, add 2 teaspoons of oil , add the tempering , when the mustard seeds splutter add the greenchillies, fry for a few secs, add onions and fry till soft. Now add the veggies , required qty of salt, mix well, add 1/2 cup of water and cook till veggies are tender. Now add the cooked semiya/vermicelli, mix it gently, cover and cook for 3-4 mts on low flame. Add the lime juice,, and garnish with coriander leaves.
